Here is a yummy peantu brittle recipe I got from one of my customers in my restaurant. She brought me a bag of it and the recipe and it is Yummy! Microwave Peanut Brittle From Linda Ball: 1 12 oz can cocktail peanuts, 1 cup sugar, 1/2 cup white Karo syrup ( Mix together, cook on high for 4 min, stir, cook 4 min. more on Med High) 2 Tbsp margarine or butter, 1 tsp vanilla ( Add to first ingredients, stir well, cook 2 min. more on Med High) 2 tsp. baking soda ( add to other ingredients, stir well) Spoon on a cookie sheet, smooth out, slightly working. After mixture is cool, break up into small pieces. Note* Stirring well is the key to this recipe!

I know times are tough right now and everyone is pinching their pennies, but we all like to go out every once in awhile. That is why my husband and I have mastered the art of eating out on a dime. For example, we'll hit our favorite Mexican food restaurant and split an entree. By gorging on plenty of free chips and salsa, we can get out of there with full bellies for under $15, including tip! Another thing we do is go to our favorite Chinese food place, order one entree, some soup and an extra side of rice and the bill totals less than $20. It's so great to get out and enjoy some good food, but not have to break our budget to do so. What do you do to get the most for you money? Check out my other blog posts on ways to save money cooking at home or picking up a great bottle of wine for under $5!
